Cantaloupe Carrot Juice


Nowadays during grocery shopping, I buy lots of fruits anything that I can get at a reasonable price such as cantaloupe, pineapple, apple etc. My little one loves apples, she loves it with her morning breakfast. With regards to Pineapple I have a crush on them like coconut, and if they are under $ 2, they will end up in my cart. 

I love to eat fruits as such or sometimes I make juice or smoothie with them. I have tried baking with fresh pineapple, it was failure nobody in my house liked it. I ended up throwing the entire cake in the garbage. Since then I dropped the idea of baking with pineapple. My baby likes only certain fruits at time. First she was a banana fan, and then comes strawberry, now apple. I don’t how long it will last. Price of strawberries for a box gone up to $ 5 dollars, so buying it, is out of question. 

My hubby makes salads with all vegetables, and he likes to eat the salad with a flood of dressing. Little one tries to get some bites in the vegetable salad usually a carrot pieces and some time bell peppers. While cutting the cantaloupe, I told him can I make juice, his reply was okay why don’t you also add some carrots. So this carrot cantaloupe juice was born. If you need more fruit flavor try with one carrot and half of cantaloupe, otherwise add two then you get more carrot flavor. Cantaloupe contains vitamins A and C which is known for heart health, where as carrot is rich in vitamin A good for eye .I thought then why wait I should make this Juice. It has beautiful orange color with hint of sugar and smell of vanilla. Try this for your occasional breakfast, better than store bought smoothie and juice.

What you need
Cantaloupe: ½ ( about 2 cup)
Carrot: 2 no ( about ½ cup)
Sugar: 1 teaspoon
Vanilla: 1/2 teaspoon
Water: ¼ cup (If you need thinner juice  increase the amount of water)










How I made

Wash and peel the skin of carrot and cut cantaloupe without skin into bite pieces and set aside.

Put chopped fruit and vegetables into the blender along with sugar, vanilla and water and blend for 5 minutes or until entire carrot gets blend into the juice.

Enjoy as much as you wish.

  20. Cantaloupe and carrot juice sounds so scrumptious together Swathi! I would like to add some ice and make a smoothie with it. You asked about the biscotti? I think it makes about 20 - I don't know exactly because I was baking all of my Christmas cookies at the same time. But it was a pretty small batch.

  23. Juice looks absolutely healthy. Like the way you described the shopping...reminds mine:) I add little ginger in this kind of mixed juice. Yours look very tasty. I will try yours for tomorrow's breakfast:)
